cafe ruta de la seda

Chef Yuny Legorburo founded Café Ruta de la Seda in 2007 and established it as Mexico’s first organic pâtisserie. Matcha and single‑origin teas are the house specialty, with matcha lattes and matcha‑based pastries clearly the reason to visit: the powder is treated with the same precision as a fine espresso and appears across drinks and confections.
Inside, the pâtisserie feels like a practical laboratory for alternative flours and spice‑route flavours—cardamom rolls, a Croissant Isfahán (fig and rose jam) and frequent use of agave or raw honey show how technique meets ingredient provenance. The kitchen’s Asian and Middle Eastern influences are tangible without theatricality, and baking is refreshed daily to highlight seasonal inputs.
On Aurora in Del Carmen the service is relaxed; many customers come for a single‑origin tea or a matcha confection and leave with packaged matcha from the in‑store épicerie. It’s a mid‑priced, sustainable option if you care about certified‑organic sourcing and pastries that explore flavours beyond the usual.
