Set in a 19th-century bluestone building on Wellington Street, this Collingwood diner offers a composed take on contemporary Australian cooking. The space pairs exposed stone and timber with soft lighting for a measured, understated elegance.
The kitchen favours seasonal, produce-led dishes with European influences—house ferments, dry-aged meats and pickled vegetables recur across a menu that’s confident in its restraint. We’d start with something off the raw section and work through slowly.
Wines are largely low-intervention, and cocktails skew towards savoury, herbaceous flavours. The whole operation feels unhurried but quietly assured.
